Wholewheat pancakes

I started my new years day with these deliciously healthy pancakes ๐Ÿ˜€ Love maple syrup! yum

Ingredients

Makes 6 small pancakes

  • 136g wholewheat flour (plain flour if you prefer)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 175ml of oat milk (or any non-dairy milk)
  • ย 2 tbsp sugar
  • 2 tbsp olive oil
  • 1 tsp vanilla extract
  • ย More olive oil for pan
  • Handful of goji berries
  • Maple syrup

Method

Mix together all the flour, baking powder and salt in a large bowl. In a separate bowl mix oat milk, vanilla, sugar and oil. Now add all the wet ingredients to the flour, salt and baking powder mixture. Let the batter rest for around 5 minutes.

Now heat a drop of olive oil in a pan at medium heat. When the pan is hot use a big spoonful of batter to make small thin and fluffy pancakes. When you see bubbles popping up give it a few seconds and then flip it over. The first few pancakes are usually not the best ones so be patient! ๐Ÿ™‚ Repeat using the rest of the batter adding more oil if needed.

Serve the pancakes nice and warm! Drizzle some maple syrup on top and finally finish it off with some toppings. Eat away! ๐Ÿ˜€

To Serve

Maple syrup, Goji Berries and blueberries.
