Okra

My mother’s lovely recipe for okra!

Ingredients

  • Okra thinly sliced
  • Olive oil (2 tbsp)
  • Large Onion (chopped-optional)
  • Garlic (2 cloves, chopped)
  • Cumin seeds 1 tsp
  • Turmeric 1/2 tsp
  • Chilli powder 1/3 tsp
  • Tomato puree (1tbsp) or 1 big fresh tomato
  • 1/4 cup hot water
  • Sea salt 1/2 tsp
  • Dash of lemon

Cooking

Fry the onions on high heat for a few minutes until translucent. Add the cumin seeds and keep stirring to prevent it from burning. Now fry the okra for around 5 minutes and then add in the tomato puree or tomato. Mix in all the spices and give it a good stir.  Turn the heat down to medium/low and add in water gradually to fully cook the okra.

Season with salt and add a dash of lemon.

To Serve

Naan bread or rice and some fresh green chillies.
