Mixed Mexican Bean Chilli

Mixed beans in tomato based chilli sauce! So full of flavour. Absolutely yum for dinner!



  • Olive oil (3tbsp)
  • Large Onion (chopped)
  • Garlic (4 cloves, crushed)
  • Mixed beans 1 can
  • Kidney beans 1 can
  • Mixed peppers (3 cut into small pieces)
  • Red chillies 1, chopped
  • Tomato puree (3tbsp)
  • Chopped tomato (1 can)
  • Hot chilli powder (2tbsp)
  • Paprika powder (3tbsp)
  • Cayenne powder (1tsp)
  • Cumin powder (3tbsp)
  • Coriander powder (2tbsp)
  • Oregano (2tsp)
  • Salt (1 tsp)
  • Pepper (1/2 tsp)
  • Half Lemon squeezed


Heat the oil  on medium in a large heavy based pan like casserole dish. Fry the onions until translucent and add the garlic. Stir for a few minutes till you get a nice aroma. Add the tomato puree and stir. Cook for a few minutes before seasoning it with all the spices. Add the mixed beans and kidney beans. Now add the chopped tomato and cover it with the lid. Let it simmer for about 5 minutes or so. Now give it a taste and adjust the seasoning as needed.

To Serve

Serve with basmati rice and freshly squeezed lemon.
