Crunchy on top and soft in the middle! Try out these delicious coconut muffins!
(Makes 8 muffins)
- Plain flour 225g
- Caster sugar 75g
- Dairy free margarine 75g, at room temperature
- Baking powder 1 tbsp
- Dessicated coconut 50g
- Coconut milk 150ml
- Chia seeds 1tbsp and 3 and half tbsp water
- Pinch of salt
Preheat the oven to 200C. Line up a muffin tray with muffin paper liners or parchment paper. Soak the chia seeds in water.
In a large metal bowl mix the flour, salt and baking powder. Now using ur hands rub in the margarine until the mixture looks like breadcrumbs. Add in the coconut and sugar. Now add in the coconut milk and the gloopy chia seed mixture which acts as a binding agent.
Scoop out the dough into the muffin liners. Bake until golden brown and risen around 15-20 minutes. Cool the buns for about 10-15 minutes on a wire rack.
