Vegan chocolate cookies
- Self raising flour 100g
- Brown sugar 100g
- Dairy free margarine 75g, at room temperature
- Cocoa powder 5 tbsp
- Coconut milk 2-3 tbsp
Preheat the oven to 180C. Line a large baking tray with parchment paper.
In a large metal bowl rub the sugar and margarine together until soft. Best to use your hands for this part. Now add the flour and cocoa and mix it using a wooden spoon. Add in the coconut milk to bring it all together until it turns into a thick dough.
Using a spoon scoop up the dough and line the cookies on the baking tray. Make sure to keep plenty of space between the cookies as they spread out. Bake until golden brown around 10-12 minutes. Cool for about 10-15 minutes on a wire rack.
