Sweet potato and red kidney bean burgers

Great comfort food! Easy to prepare and you can even eat TWO burgers or more;)  without feeling the guilt!


Serves 4


  • Cooking oil 1 tbsp
  • Buns or baps
  • 4 large sweet potatoes, Oven roasted
  • White onion sliced, Oven roasted
  • Oats 1 cup
  • Kidney beans 400g can, Boiled
  • 3 garlic cloves, Oven roasted
  • Harrissa paste or powder 4-5 tbsp
  • Red chillies 2, sliced
  • Cucumbers, sliced thinly
  • Iceberg lettuce
  • Avocado, cut in cubes or slices
  • Pink Himalayan salt


Preheat the oven to 200C and roast the sliced sweet potatoes, onion and sliced garlic. Boil the kidney beans for 5 minutes in water. Drain and let it cool.

Get the food processor ready! Throw in the oats, beans, sweet potato, onion, garlic and chillies. Season with harissa and himalayan salt. Chop it all up until its turns to thick paste. Make sure to not over mix it. Taste the seasoning and adjust as needed. Now put them together in whichever shape you fancy. Round shaped if in doubt :p

Heat the oil in a frying pan and fry them burgers. Heat up the bun on the same pan and layer on the lettuce, cucumbers and the burger. Top it off with some avocado! Enjoy.

To Serve

Spicy tortilla crisps or sweet potato fries.
