Pad Thai Rice Noodles

vegan-pad-thaiYou need to try this if you want something spicy and sour. This is my perfectly simple and delicious homemade “takeaway”.

Ingredients

(Serves 4)

  • Cooking oil ( 3 tbsp)
  • Rice stick noodle 450g
  • Bean sprouts 100g
  • Spring onions diced 1cm
  • Red chilli flakes 1 tbsp
  • Unsalted roasted peanuts 4 tbsp
  • Eggs 3 beaten (optional)

Tamarind Sauce

  • Tamarind juice 8 tbsp
  • Palm sugar 3 tbsp
  • Sugar 2 tbsp
  • Chilli flakes 1 tbsp
  • Salt 1/4 tsp

 

Method

Sauce: Mix the tamarind juice, palm sugar, sugar, crushed chillies and salt in a saucepan and bring it to a boil and simmer until sugar is dissolved. Allow it to cool. Soak the noodles in hot water until soft.

Heat the oil at medium heat in a wok. Stir fry the noodles for a minute and then pour the sauce all over. If using eggs, add the beaten eggs and cook on one side. Now add the bean sprouts, spring onions and dried chillies flaked. Toss it all up and Enjoy!

 

To Serve

Serve with peanuts and fresh limes.
